Spring is finally here and in Southern California that means it’s warm enough for my toddler to run around the house in his Paw Patrol underwear all day. I swear that child would leave the house in his underwear if I let him. Thankfully there haven’t been any meltdowns as to why he can’t leave the house in his undies (YET). Wish me luck that it stays that way. 😉
On another note, I have wanted to come up with a dessert that is a bit lighter and spring like, especially since we will be eating a giant meal on Easter. This Simple Vanilla Parfait is the perfect light dessert after a big meal. It looks like you went out of your way to impress your guests when it really takes no time at all to prepare (about 30 minutes). Also, it’s gluten free and has very little sugar. So, your welcome that your children well be less of a little terror stampeding through the house from all the sugar consumed in their Easter baskets after eating this dessert.
The pudding is creamy and has little bits of vanilla bean throughout. It’s just the right amount of sweetness (I tend to like things on the not so sweet side) with a little hint of honey to bring out the flavor of the vanilla even more. The strawberries add a little sweet and barely tart flavor to balance out the sweetness. The whip cream is sweetened with a little maple syrup and then it is all topped off with some toasted coconut.
So do yourself a favor this Easter or any time you’re making dessert for guests. Make this to simplify the cooking so you can spend more time with your family and guests. Cheers to simple desserts!
