Happy New Year! My husband and I started our workout routine again today so we shall see if I can walk tomorrow. I’m kidding (but seriously)! We are also reading at night before we go to bed, which we were hoping would help us sleep better, but not so much when you have a toddler that needs a drink of water in the middle of the night. Someday we will miss the sleepless nights. Someday.
On another note, what’s up with all this rain in California lately?!?! I feel like I’m back in the Northwest again. I think we have acclimated because I made my son wear mittens on his bike ride the other day when it was almost 60 degrees outside. Now he’s asking to wear his mittens all the time, even when the sun is out. Look what I have started. Next he will want to wear them to the beach!
Since the weather has been cooler, soup has been on my mind. Who am I kidding. Soup is ALWAYS on my mind! More specifically, this Potato, Rosemary & Celery Root Soup. You might be thinking, celery root?? Trust me I tried making this soup with regular old celery and it lacked in flavor big time. The celery root is ugly, let’s be honest. If you haven’t seen what it looks like here is a photo. The flavor is not overwhelming, it’s just right. The rosemary is also very faint. To sum it up the soup is silky creamy with the perfect medly of potato, rosemary and celery root. Not one of the ingredients out does the other and yet you recognize each individual flavor when you take a slurp. I mean bite!
If you want to keep the soup dairy free just skip the heavy cream and cheese. There are some great dairy free creamer options out there if you would like to substitute. Feel free to add some crispy bacon, a different cheese, some green onions, sour cream, or whatever sounds delightful to you at the time. Cheers to cozy soup!
