I don’t know about you guys, but sometimes I get stuck in a sandwich rut. Either that or I need to do some serious grocery shopping to add a little more variety in my cupboards. A few weeks ago I wanted a little more substance than peanut butter and jelly, grilled cheese or quesadillas. What can I say; I have a toddler in the house! I opened the cupboard and found some cans of tuna (I purchase mine at Costco) and the creative cook in me put a new twist on a tuna melt.
Say goodbye to boring tuna sandwiches and hello to this Mexican Tuna Melt! I quick pickled red onions in lime juice while prepping the rest of the tuna melt. There are chopped jalapenos from my Easy Pickled Jalapenos recipe, cilantro, fresh tomatoes, black beans, avocado, a little cheese, some mayo, and a touch of seasoning. It is then all wrapped into a tortilla and cooked on the stovetop until the cheese is melted and the tortilla is browned. When it’s finished I slice it in half and then serve it with a little salsa and sour cream.
This recipe is ready in less than 30 minutes and explodes with great flavor! Cheers to a delightfully delicious tuna melt!
