I have to say my top two favorite food types are Mexican and Mediterranean. I would eat both everyday if my family would let me. In fact, I did eat it A LOT when I was pregnant but that excuse is long gone now. 😉 My excuse now is, “it’s a new recipe for the blog”. We shall see how long I can get away with that excuse. Now we are off to let you all in on a few tips of where I found some of my ingredients. The ground turkey is organic and I find it reasonably priced at Costco. It comes in a two pack so if you wanted to double the recipe and shape the patties you could freeze 1/2 of them on a tray. Once the patties are frozen remove them from the tray and place inside of a ziplock bag to cook as needed or all at once on a night you are in a rush! You can make your own almond meal in a Vitamix or food processor or I purchase mine at Trader Joe’s.
These Mediterranean Turkey Wraps are tender, have a pop of flavor from the lemon zest, have some veggies hidden inside (for all the parent’s with children of veggie refuters out there, my son included), a few spices, and some almond meal for those who are trying to stay away from gluten. It is then wrapped in a warm pita (or lettuce for those wanting to skip the gluten) topped with yogurt sauce, tomatoes, cucumber, onions, feta, and lettuce.
