After eating more than my fair share of rolls, turkey, mashed potatoes, pie, and then some during Thanksgiving last week, I feel like I need to redeem myself with a lighter meal such as soup. I happen to love soup and could eat it everyday, if it wasn’t for my meat eating “bring me some potatoes with this meat” husband (whom I happen to love dearly). So now you see my dilemma. I want something lighter and my husband wants something a little heavier that doesn’t make him feel like he’s on the soup and salad diet.
This Lentil & Sausage Soup makes the whole family happy. Can I do my, ‘I feel like I have conquered the world’ happy dance now? Ok, you really don’t want to see that, trust me. My husband is content because there is sausage and the lentils are full of protein and fiber. Then there are tomatoes, onions, celery, and carrots, which make me happy that my toddler is actually eating veggies! Can I get an Amen? I also get my soup craving filled and we’re all happy, warm and full!
Before I get to the recipe I have to share something with you. For the first time in my life I tried a few dashes of sherry vinegar on my lentil soup. Can I just say my taste buds exploded and thanked me for the vinegar addition? You might be thinking you’ll just leave this ingredient off of your shopping list but I plead and implore you to PLEASE buy it and add it to this soup. It brings it to a whole new level. Trust me!
