Is it just me or does anyone else like to take a little extra time on their weekend cooking? I feel like weeknights can be incredibly rushed trying to get the family fed and into bed. The weekend allows a little more freedom to wait for something to bake in the oven or cook in the crockpot.
I also enjoy spoiling my family a little on the weekend and treating them to something a bit nicer than a quick weeknight pizza or hot dogs. Yes, even food bloggers like myself have hot dog and pizza nights. It’s just life sometimes and that’s ok!
This Lemon Oregano Skillet Chicken is simple, juicy and explodes with flavor. My son is a ketchup fanatic and he requests it on his eggs and any piece of meat. I don’t fight him because he’s actually eating what I make and I don’t have to beg and plead for at least one bite to be eaten. The struggle is real! When I made this chicken he did his usual request for ketchup. As I was getting up from the table to get it, I noticed he got distracted and started eating it with no ketchup. Then he continued taking bite after bite with nothing to dip it in! I didn’t mention the word ketchup and it was never brought to the table the entire meal. He kept telling me it was yummy chicken. Winning!!
In all seriousness, this skillet chicken has wonderful flavor from the spice rub. The oregano and lemon are the stars of the show. The capers give it a little salty zing. The onion and chicken broth make sure the chicken gets a nice bath to keep it moist and juicy! I pour the juice from the chicken and broth on top of my piece of chicken after it has been cooked. The juice is incredibly flavorful from all the lemon, spices and herbs.
Make this on a weekend and spoil your taste buds a little! I have family coming to visit in a few weeks and you can bet this will be on the menu plan.
