I love summer because there is such a tasty variety of fruit in the super market. It’s not the same old bananas, apples, and oranges that seem to be the only affordable fruit in winter. This, my friends, is a Lemon Berry Tart, which is summer on a plate. It’s the run to your farmer’s market right now and purchase at least one pint of every berry in sight kind of a tart. This dessert appeals to those with a sweet tooth, gluten free, and those trying to cut refined sugar out of their diet. All without losing the perfect harmony of sweetness and flavor. The filling has lemon curd, which has been sweetened with just the right amount of honey to take care of the tartness from the lemons. The lemon curd was also whisked in with some fluffy cream cheese. The crust is made with Bob’s Red Mill gluten free 1 to 1 Baking Flour, almond meal and then sweetened with a touch of coconut sugar. In the past, I have partaken of tarts that have some sort of sugary sweet yummy berry jam drizzled on top, but I opted out on this tart. After tasting the tart without the drizzle, I have concluded the berries do justice on their own as they burst with bold and in season summer flavor.
