Lately I’ve been on this walnut and pomegranate kick. Not the two together necessarily but I buy them almost every time I go to the farm where I purchase a lot of my fruits and veggies each week. They have these white flesh walnuts they grow on their farm and the taste is no comparison to what I buy from the grocery store. I even had to buy a nutcracker since my addiction is a little out of control. 😉
Since I like sweet and savory together I threw some maple syrup and a little sea salt into a pan along with some fresh walnuts. They taste like candy and they are my new favorite snack! Speaking of snacks. I don’t know about you but I’m always on the lookout for a snack that’s healthy and isn’t lacking in the flavor department. This Honey Cashew Fruit Dip hits the spot with both protein and flavor!
It has Greek yogurt and cashew butter that I like to buy from Trader Joe’s. It is also naturally sweetened with a little bit of honey and then mixed with vanilla extract and cinnamon. You could stop there but I wanted to add a little crunch from the maple walnuts. There is also a little more natural sweetness from the dates and pomegranate seeds. This snack is elevated for a holiday appetizer or packed as a snack in your kiddos lunch. Enjoy!
