A few weeks ago we had company for dinner and I made this Flourless Chocolate Cake as a test. I know, not the best idea to test a new recipe on company, but thankfully it turned out ok…and we’re still friends! In fact my friend’s husband caught their son red handed licking his plate by the kitchen sink. That’s when you know it’s a keeper recipe. 😉
This would be a perfect dessert for Valentine’s Day or on a night you want to impress your guests after dinner. It is rich, decadent, just the right amount of sweetness, and it almost tastes like a truffle (or so I have been told). The raspberry sauce helps cut through the richness a bit too.
Isn’t it gorgeous? Also, I have a little secret to confess. Instead of using regular old white sugar, I used dates (which I find at my favorite store, Costco) and made them into a paste in my food processor. You can’t even tell the sugar is missing and because the dates are in paste form, you don’t even realize they are in the cake. Enjoy and cheers to chocolate!
