The past few weeks have been three-day weekends for our family, which has been awesome! With those three-day weekends there were lazy mornings of sleeping in and not exactly light and simple breakfasts were consumed (if you catch my drift). We may have had my Overnight Apricot Cinnamon Rolls a few times. Now I’m ready for a simple and breakfast once again with fewer calories consumed.
I say I’m ready but let’s talk about my toddler for a minute. He is now going through this faze where he comes to the table at a mealtime and looks at his plate before sitting down. If it’s something he likes I hear an emphatic, “YESSSSSS!” If it’s something he is not familiar with I hear, “I don’t like that.” I tell him to give it a try and remind his that he’s never tried it before. It doesn’t seem to change his mind much. Mamas out there, please tell me this too shall pass!
Now that you’ve heard my mom rant on my toddler’s pickiness, lets get back to why we are all here. Oh that’s right, the Dark Chocolate Granola recipe that is gluten free (here is where you can find the gluten free oats) and not full of sugar. I love it because I eat it with plain Greek organic yogurt (and a dab or two of raw honey), which is full of protein. Even better, my toddler likes the granola!
When it’s baking in the oven you can smell the toasted pecans, the warm cinnamon, cocoa, and sweet vanilla. My house smells decadent! I wish your computer screen had a scratch and sniff option! Someday!
With only 10-15 minutes of prep time and 20-25 minutes in the oven, there’s no need to slave over a hot stove for hours with this recipe! 😉 Cheers to quick and healthy eating in the morning!
