It’s the weekend and what better way to celebrate than with a big (I mean GINORMOUS) bowl of this Creamy Pesto Pasta!! This pasta is the definition of comfort food. It is creamy, buttery, garlicky, has a few splashes of wine, and fresh pesto. It is also cooked in the yummy brown bits from the chicken to make it even more flavorful! Can it get any better?? Yes! This meal comes together in 45 minutes or less.
Last weekend I went out to my garden to pick the last of my basil and I had a huge bowl on the 1st of November of all days. One of the many perks of living in Southern California. I decided that a big batch of pesto making to freeze was in order. I also didn’t do the usual pesto, which consists mostly of garlic, basil and pine nuts. My frugal brain can’t wrap my mind around the thought of paying an arm and a leg for pine nuts. I instead used walnuts and a few slivered almonds from Trader Joe’s. It still tastes divine with the substitution of nuts! I also had some roasted tomatoes that I recently roasted and decided to throw them in for the extra flavor. I also used fresh lemon juice and lemon zest because I have a giant bag of lemons from Costco to get through. After the pesto was buzzed together in my food processor I noticed there was some heavy cream in my fridge and that’s where the magic happened in making a creamy pesto sauce with pasta. It really is a match made in heaven!

I have a few of these jars full of pesto in my freezer and I am not one bit upset about all the delicious pasta that will be had with it!
Let the pasta making begin…
Melt your butter first.
Add your chicken thighs and some salt and pepper.
Add your wine to get all those brown bits from the bottom of the pan.
Next add your pesto and stir.
Add your cream and stir again.
Add your cheese and stir.
Add your pasta.
Then add chicken and stir again. I promise all the stirring will end soon and you can thank me for the arm exercise because you’re burning calories from the lovely cream you will be consuming in a few short minutes.
Add a little more cheese on top and consume immediately!
