Like many families we have mornings where there just isn’t time to make something for breakfast, let alone eat together. I try and avoid buying cereal at all costs since it doesn’t keep us full for long. I’ve gone the cereal route out of desperation and lack of time, and things don’t end well. I am then stuck dealing with a hangry (hungry and angry combined into one and it’s not awesome) toddler. No one wants to start the day off that way, no one! Recently I have found that I enjoy making homemade granola and serving it with Greek yogurt. It’s packed with protein and keeps those toddler hangry tantrums at bay. It’s a win win for everyone!
I finally decided to take a plunge at the whole granola making thing and create my own recipe with a Fall twist. This Cranberry, orange and Pumpkin Pie Spice Granola has a little sweet, a little spicy and little citrus flavor that gives you all the good feels of Fall. What makes it even better is there is NO refined sugar. It is sweetened with maple syrup and a little coconut sugar. Orange zest gives it the tangy citrus flavor and the Pumpkin Pie Spice adds a little warmth. Did I mention it’s also gluten free? The thought of making your own granola may sound a bit daunting but rest assured, it’s really quite simple and quick. You could have this granola spread on a baking sheet and in the oven in 20 minutes or less! You can also double the recipe and go a few weeks without making it again. Then, just sit back and enjoy your stress free mornings!
First add all of your wet ingredients into a saucepan.
Once the coconut sugar has dissolved and your vanilla has been added, remove pan from heat and add your dry ingredients. Stir together.
Pour granola mixture on a jelly roll pan (I call them a cookie sheet with sides) and spread evenly.
So simple and so good!
