Ingredients
  • rind of one tangelo(you will want large pieces cut up & I included a link for a zester in my post above)
  • rind of 1/2 a lime
  • 3tablespoons fresh squeezed lime juice(from about 2-3 limes)
  • 1cup fresh squeezed tangelo juice(from about 3-4)
  • 1cup filteredwater
  • 1/3 cup+ 3 tablespoons honey(try to use a lighter colored honey that isn’t flavored)
  • 1liter soda water/seltzer water(or less than 1 liter if you can find something smaller)
Instructions
Honey Simple Syrup
  1. Add all ingredients listed above (minus the seltzer water) to a medium sized saucepan and mix well. Turn heat to medium and bring to a boil. Stir the mixture and turn down to a simmer for about 10-15 minutes. Remove from heat and allow the syrup to come to room temperature for about 45 minutes. Remove zest pieces from the syrup. You can then place syrup in a sealed container for at least one week ours didn’t last 24 hours). Makes about 2 cups of syrup.
Citrus Lime Soda
  1. Fill an 8 ounce glass (or larger glass) with ice. Pour 1/3 – 1/2 the glass with the citrus lime simple syrup (depending on your sweet tooth) and the remainder of the glass with seltzer/soda water. Stir, serve and enjoy!
Recipe Notes

-While citrus is at it’s peak I will be freezing tangelo juice so I can make this soda all summer long.

-You can use a different type of citrus other than tangelo but you may need to scale back on the honey. Tangelos are sweet but they also have a bit of tartness which helps cut through the sweetness of the honey. Something to consider. 🙂

-I have a zester similar to this one that you may find helpful for making this. Unless of course you have made knife skills
