I still remember the days when I worked full-time outside of the home with a newborn. My days were pretty rushed and I felt like I couldn’t keep up with life in general unless I had some sort of plan. Thankfully I’m a planner and I love to eat so I made sure I planned ahead with meal planning, grocery shopping and cooking.
While the ‘working outside the home’ days are behind me, I still find that I look for meals that I can plan ahead with during the week. Now that my son is a toddler I want to enjoy the little moments of make believe playtime, story time, bike rides, beach days, and zoo days as much as possible. I need meals that are delicious, not from a box, and won’t take hours of my day to prepare.
This Chicken Adobo is my kind of meal. It’s simple, healthy and mostly hands off. At night after my son goes to sleep I prep all the ingredients and place it in the fridge. Dinner is ready, simple, mess free, flavor packed, and my family is full and happy. That’s my idea of the perfect meal.
You literally have about 15 minutes of prep time putting everything in a large pot. Then you turn the chicken (which I find my organic chicken at (Costco) once or twice during the marinating time. After the marinating is complete, cook (at a simmer) and turn the chicken a few more times. I like serving mine with steamed rice. You could also try it with cauliflower rice which I have a recipe for here. Also, it’s gluten free for those of you trying to stay away from gluten.
Once the chicken is done, serve it and enjoy! I like serving mine with a little fresh lime and cilantro. The chicken is incredibly flavorful. You can taste the saltiness from the liquid aminos and the pop of zest from the lime and white vinegar. The bay leaves add a depth of flavor and the chili flakes add a slight pop of warm spice. The garlic, all I can say about the garlic is you can never have enough. I might even add a little more next time I make this recipe. The honey helps to balance out some of the acidity from the vinegar and lime.
