As I’m sitting here writing this blog post I’m feeling a little guilty. Guilty over what you might ask? That would be the excess amount of cinnamon rolls and homemade caramel sauce I have been gorging on lately (which I plan on sharing the recipe with all you lucky friends next week). I mean someone has to take one for the team and make sure the cinnamon rolls are perfect for all of you. 😉 Can I make up for all of my cinnamon roll eating with a salad? I’m going to say yes and share this delectable Cabbage Lime Salad with you all! It will be on repeat in your home all year long, I promise!
In the wintertime I enjoy making cabbage salads. I love that they are so simple to make and I can still eat it the next day even if the dressing was poured on the day before. First, let’s start with the salad dressing (you literally want to make this first so all of the spices have time to meld together and flavor the dressing). The lime stands out and adds a little zing to your same old salad dressing. The maple syrup adds just the right amount of sweetness. I like using maple syrup in dressings over honey as it mixes well and doesn’t sink to the bottom of your dressing container. And one more thing, the best and most inexpensive place to purchase maple syrup is Costco (in my humble opinion).

Now on to the salad portion of the recipe! You will want to use a mandolin for this recipe or a very sharp knife. This salad is full of crunchy veggies like radishes, cucumber and of course the shredded cabbage. There is a slight kick from my Easy Pickled Jalapenos (you can also use store bought jalapeños), and a salty tang from the feta cheese. The carrots are sweet and have a slight crunch and the pepitas add a toasted crunch. This salad would also be delicious wrapped up inside your favorite tacos! Cheers and enjoy!
