I made these Blueberry Scones with Lime Curd a few weeks ago and I felt so spoiled after taking my first bite. Have you ever been to a nice restaurant where they serve you tea in a mini ceramic pot and all the food looks like it should be on display because it’s so perfect and beautiful? You almost feel like you’re in a dream. Anyone with me? This is exactly how I felt when I bit into these flaky and buttery scone with sweet blueberries. The lime curd, whoa, it just goes with the blueberries!
Valentines Day is just a short week away people! These scones would be perfect to surprise a special someone first thing in the morning. They are simple to make and if you want to make the morning even more of a breeze, make the lime curd the day before. This breakfast can be on a serving tray and walked down the hall in no time at all!
I served mine with fresh oranges and a cup of loose-leaf tea. Bacon wouldn’t be so bad with it either if you catch my drift. 😉 Also, these are naturally sweetened with coconut sugar (find it at TJ’s) and honey. Even better!
