I have been working at improving my photography more and figuring out my photography style. We decided to take a break from posting so we could focus on some things we felt were important and a little overwhelming to take care of on top of posting a couple times a week. We are happy we stepped back to focus on some things and I am also happy to announce we have a deliciously simple new meal to share!
Hello Baked Chicken Taquitos with Avocado Salad!! This meal comes together in about 30 minutes or less. I like using a rotisserie chicken that has already been baked for me at the store. I usually find mine at Whole Foods and sometimes I cave and buy a Costco chicken. 😉 You can also roast your own chicken at home or better yet use leftovers from a baked chicken you cooked for the previous nights dinner. If you want to make the meal stretch just add more black beans, roasted corn, a little extra cheese… You catch my drift! Also, use corn tortillas instead of flour if you would like to keep it gluten free.
The taquitos aren’t heavy and they are soft in the middle and crispy on the outside. I spray mine with an olive oil cooking spray just before baking to make them crispy on the outside like the fried version. They are cheesy and my weakness. If you have the time, make a double or triple batch and freeze the rest for a night you are really in a pinch for time to make dinner. Ok, so about this Avocado Salad. It’s my new favorite salad and I have literally made it at least 8 times in the last few weeks. Ask my poor husband who has been a champ and not complained once for the salad repetition I have going on right now. 😉 The inspiration for this salad came from a One Potato meal but I made a few tweaks on how we like it as a family. It is so creamy, crunchy, tangy, and I even enjoy eating it on top of my taquitos or with salad greens. Also, it literally takes 10 minutes to throw together. Winning!
