Let’s talk about New Year’s. I feel like gone are the days of staying up past midnight since I had a child. Also, my husband turns into a pumpkin at 10:00 pm. I tried (begged) getting him to stay up late when we were first married, but I’ve decided I enjoy being around a husband who gets his full eight hours of sleep at night.
Anyway, back to New Year’s changing since having a child. It really isn’t a terrible thing that things have changed since having a little one. Life just changes and you roll with it! Our New Year’s may not entail going out or staying up at least until midnight to watch the ball drop, but I love the new traditions we have. Each year we sit down together and talk about the year. We reflect on the good, the bad and the ugly (although, it’s mostly good even during the challenging times).
Last year we started writing down some of our dreams and goals so I’m excited to see how far we have come since then. I’m excited to set some new goals for me personally and with my hubby who I get to do life with. 2017 is going to be even better than 2016!
You know what else I’m excited about? Sitting down to a giant bowl of this Bacon & Spinach Pasta!! First of all there is smoky crunchy bacon! Also, we can’t leave out the Gruyere and sharp cheddar cheese. I did use a gluten free green lentil and quinoa penne pasta. In case you are wondering the brand is called Ancient Harvest and you can find it at most natural grocery stores such as Sprouts or Whole Foods. Last but not least there is the almighty spinach that makes me feel a little bit better about giving my three-year-old cheesy pasta with bacon. All the flavors together are on point!
I used gluten free panko bread crumbs and didn’t notice a difference in texture or flavor.
